Old-fashioned Peach Pie

We are still eating peaches, and I still have a few more peach pies to make.  Here is a good recipe for an excellent, old-fashioned double crust peach pie.  Sorry the picture isn't that great, but it didn't last long enough to take another one.


Peach Pie
pastry for a double-crust pie
3 c sliced peaches (for 9" pie)
1/2 c white sugar
3 tbsp cornstarch
3 tbsp butter

Mix the sugar and cornstarch together, then stir in peaches and pour them into the pie shell.  Dot with butter and cover with the top crust.

Bake 425 for 15 min, then 350 for 30 min.
