Oatmeal Pancakes
1 1/4 c whole wheat flour
3/4 c rolled oats
1/4 c wheat germ
1/4 c dry milk powder
2 tbsp brown sugar
1 tsp baking powder
1/4 tsp salt
2 eggs, lightly beaten
2 c buttermilk or sour milk
3 tbsp vegetable oil
optional: fruit such as blueberries, diced apple, etc.
(If you want to counteract any health benefits they may have, add chocolate chips!)
Mix all ingredients in a large bowl. Cook on a hot griddle like normal pancakes.
