More Muffins on Monday

It is currant season, and we have a couple large currant bushes in our garden.  My husband's favorite thing is red currant pie and my favorite is black currant jam, but there are many other things you can do with currants.  These red currant muffins are yummy.

Red Currant Muffins

2  1/4 c flour

2/3 c sugar

1 tbsp baking powder

3/4 tsp salt

3/4 tsp cinnamon

1 egg

3/4 c milk

1/2 c vegetable oil

1  1/2 c red currants


Combine dry ingredients in a large bowl.  Mix egg, milk and oil in a measuring cup, then pour into dry ingredients all at once.  Stir just until moistened.  Gently stir in red currants.  Scoop into greased muffin tins.


Bake 20 to 25 min at 400.
