Honey Bran Muffins
1 c natural bran
1 c buttermilk or sour milk (regular milk with 1 tsp lemon juice or vinegar)
1/3 c margarine
1/2 c brown sugar
2 tbsp honey
1 egg
1 c flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
Soak bran in milk while preparing the rest.
Cream margarine and brown sugar. Beat in the honey and the egg. Add the bran mixture.
Stir in dry ingredients until moistened. You can add any extra add-ins that you like: raisins, chocolate chips, nuts, etc.
Bake 375 for 15-20 min.
