Yummy Muffins

I love muffins.  They are a great breakfast or snack and there is such a variety - from savory to dessert.  I make muffins at least once a week.  Here is a great versatile recipe.


Rhubarb muffins

1  1/4 c all-purpose flour
1  1/2 tsp baking powder
1 tsp salt
1/4 c white sugar
1/4 c brown sugar
1  1/2 c diced rhubarb
1 egg
1/2 c milk
1/4 c oil
1 tsp almond flavoring

Mix dry ingredients.  In a smaller bowl, beat egg, add milk, oil and almond flavoring.

Pour wet ingredients over dry and stir to moisten.  Fold in rhubarb.

Bake 20 minutes at 375.


This is equally delicious with other kinds of fruit - peaches, blueberries, I've even tried red currants.
